Food Allergy

As many as 15 million Americans live with food allergies, and according to the CDC, food allergies among children have increased 50% between 1997 and 2011. This large upswing in food allergies doesn’t have a known cause.

Allergies that cause anaphylaxis are not the only type of food allergy. Delayed hypersensitivity is a typical allergic reaction that can show up hours or even days after problematic food consumption.  Because of this, many allergies and intolerances go undiagnosed in patients.  Without the proper diagnosis, it is difficult for patients to manage their health effectively.  Some of the ongoing problems related to food allergies include.

Our Phoenix area patients can be allergy tested in our office. The method we use is quick and simple. It requires only a finger poke and a small amount of blood. Although wheat, eggs, milk, peanuts, tree nuts, soy, fish, and shellfish are the most common problem foods, we test for 95 different food allergens. Your test results will list all food allergens and note whether they are safe, moderately safe, or should be avoided.

This means you’ll have clear answers and can move forward with creating a diet that eliminates troublesome foods. If you need guidance in this area, we also offer nutritional counseling. Dr. Burns is allergic to both gluten and sugar, and she understands the lifestyle adjustments needed when one is diagnosed with a food allergy.

While these tests are highly accurate, there are still some people who test negatively for certain allergies, yet still have issues. We see this frequently with gluten, although the cause is not yet known. Non-celiac gluten sensitivity may be related to wheat, rye, or some something else. It is estimated that 9 in 100 people could have a gluten sensitivity.

Symptoms of gluten sensitivity include gas, bloating, pain, fatigue, low libido, headaches, and joint pain. If you were negative for gluten sensitivity, but still have symptoms, remove gluten from your diet for 21 days and see how you feel. Many people report feeling better when they eliminate gluten from their diets. It also seems to help IBS patients.
